    hard to get healthier foods into
    the school cafeterias. He has a
    website were you can sign his
    petition. Here's a recipe I pulled

    These American pancakes are great! Instead of being thin and silky like French crêpes, they are wonderfully fluffy and thick and can be made to perfection straight away. Simple, simple, simple – my Jools goes mad for them.

    First separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Fold into the batter – it is now ready to use.

    Heat a good non-stick pan on a medium heat. Pour some of your batter into the pan and fry for a couple of minutes until it starts to look golden and firm. At this point sprinkle your chosen flavouring (see below) on to the uncooked side before loosening with a spatula and flipping the pancake over. Continue frying until both sides are golden.

    You can make these pancakes large or small, to your liking. You can serve them simply doused in maple syrup and even with some butter or crème fraîche. Or if you choose to sprinkle with a flavouring, try one of these...

    fresh corn from the cob
    crispy bacon or pancetta
    blueberries
    banana
    stewed apple
    grated chocolate
    anything else you can imagine...

    PS Blueberry pancakes (above) are great but you must try the corn pancakes. On one condition – you must use fresh corn. To do this, remove the outer leaves and carefully run a knife down the cob – this will loosen all the lovely pieces of corn – and sprinkle these raw over your pancake, before flipping it in the pan. I like to have some grilled bacon over my corn pancakes, drizzled with a little maple syrup. This sounds bloody horrid but it honestly tastes great!

    The corn pancakes sound almost like the corn fritters I make. The family loves them.

    I love to watch Jamie and even have one of his recipe books, but I haven't tried any yet. I have been so hung up on old favorites and Rachel Ray. Smile

    In the absolute health food view, nah ... but you can tweak them. You could use a different type of pasta instead of wheat pasta. Her salads are pretty yummy. She also has turkey and chicken burgers maybe you can tweak to your liking. Sorry, don't know if you're vegetarian or not. Check out her website.

    my family of eleven could not afford meats, soup
    consisted of a beef bone to flavor and get marrow.
    The butcher threw these bones away! Today in whole
    foods that same meaty bone sells for $5 a pound affraid

    In the US I've enjoyed all the diverse foods available.
    During my healing journey I chose not to have red meats,
    dairy, sugar, I learned to eat more green without bottled
    salad dressings. bake my own carrot cakes, much of what
    Jamie is promoting. sunny

    Oh, man do I miss the choices available in the States. I come from the San Joaquin Valley in California. I only bought veggies and fruit from the grocery stores in the winter. The rest of the time I had it at home or could buy it direct from the farmer or a fruit stand. We also bought homegrown beef and pork, so we knew how it was fed and cared for. I was in shock when I moved to Sweden almost nine years ago. The lack of choice in everything and the quality of what is available. Yikes.

    I eat kind of controlled carb in that I am picky about where they come from. I avoid sugar, wheat products, rice, potatoes and if I am in a situation where I eat them, I go for healthier alternatives. I like to make my own salad dressing from olive oil or flax seed oil. Sometimes I make my own mayo. There are times I give into a bottled creamy dressing, but try to avoid it along with other boxed and bottled things. I get most of carbs from veggies and a little fruit, once in awhile I splurge on sweet potatoe, brown rice, corn tortillas, spelt products. I don't eat much red meat here, because it sucks and there isn't much to choose from. I would probably eat too much red meat in the States.

    Just don't think I am an angel. lol I go over to the dark side from time to time. Last night I ate some milk chocolate with hazelnuts. lol I usualy have a little dark chocolate that I have to hide from my 5 year old who loves it. Anyway, it was a weak, delicious moment.

    Yes food choices can be challenging
    and learning to find the time to shop
    for health instead of comfort foods
    is time consuming at first. Then growing
    your own food means working the soil.
    In the end it becomes part of the routine
    to making healthy choices. Watching the
    resistance that Jamie was receiving brought
    back memories of my teaching days when parents
    did not pack a lunch and cafeteria food was
    so disgusting that even the children dumped it.
    The children did drink the chocolate milk.
    I had plenty of healthy snack food for hungry
    kids. I taught in an alternative "Public"
    school before charter schools became popular.

    I do make my salad dressing out of flax oil
    and add turmeric to it. My husband still
    likes the bottled stuff. He likes red meats so
    I do buy the organic. I will eat tofu instead.
    But chicken and fish are served more often. You
    must be familar with "Trader Joes" if your from
    California. Have TJ's moved to Sweden or have
    they always been there?

    I have lived in the US for over, OMG 48 years
    it's been that long. Arrow lol!

    Haha, I think you're Americanized. lol

    I love TJ's. I used to drive over an hour one way to my closest one in California. There is no TJ's here that I know of in Sweden. I belong to a forum for english speaking moms in Sweden and plenty have asked about TJ's and the like. I usually end up scouring the net trying to find things or do without.

    Now you can't buy Stevia in Sweden, so I ordered it online, had it shipped to my mom in Nevada, and she throws a bottle in box she is sending over from time to time. I have to have my Stevia. cyclops

    Stevia is so sweet but its a
    great sugar substitute for
    folks who have diabetes. cherry

    In my city we have 2 TJ's. My daughter
    has to drive about an hour to TJ's cheers

    Good old culture shock.  It's an interesting experience.Now I am envious.  TJ's  .... I'm going to be dreaming about shopping there.  lolAbsolut.  Jag kan svenska.  (Boy, do I have an accent while speaking it. )

    You can't appreciate what you have
    culturally, if you don't know what
    you've got. I'm sure your seeing
    the trade off's.

    Some people catch my accent some think
    I'm Canadian other quickly pick up on
    my Irish accent.

    I love people's accents BTW.  I think it's interesting.  I also like looking at old family photos and hearing about where the family came from, it doesn't have to be my own family.  Ah, names.  I love names.  lolHere most people guess I am English speaking when they hear me speak Swedish.  I have had some Swedish people tell me I sound like actors in Hollywood.  I was born in Los Angeles, just a hop, skip, and jump away.  I have also been told by a few other Swedes that I have a strange English dialect.  Some fellow Californians think I sound a bit countrified.  So go figure.
